Beyond the Mouse project
Some useful links:

Maurice Benayoun, installation artist
http://www.benayoun.com/index.htm

The emotion series is interesting. Not much with regards to the technical side of things (sensors etc) but the conceptual element is worth a look. Particularly liked the Emnotion Stock Exchange piece.

Martin Creed, installation artist
Lights Going on and off

Again more conceptual than technical, a simple application of lights on a timer. This piece won the Turner Prize a few years back.

More info on these in my blog here.

Ada intelligent learning interaction

Ada info PDF link
Ada at Specs

A really advanced example of a motion sensing piece. The Artificial Intelligence of Ada increases as more people interact.

These were referenced in Carole's post but I think they're great:

Perry Hoberman
Bar Code Hotel
Cathartic User Interface

A couple of projects that make use of simple interaction techniques that immerse the user in the whole experience. A distinctly mid-90s look to the visuals also, which I love!
